Stand the bird upright on the large vertical roaster, fill the reservoir with your choice of liquid (water, apple cider, wine, beer, or a blend of herbs and aromatics), and let the Primo's convection heat do the work. The steam rises through the bird from the inside, keeping the meat incredibly moist and infusing it with flavour, while the outside develops a deep, golden, crackling skin.
